At this year’s Zero Waste Dinner (December 2025), we celebrated creativity in the kitchen by cooking with what Cyprus already has in abundance. The vibe of the evening was deeply local, inspired by Cypriot farmers, seasonal products, and ingredients that are often overlooked or wasted.
A special focus was placed on bananas grown in Pafos, a local product that is frequently left unsold or unused despite its quality and availability. Together with participants, we explored how surplus and seasonal ingredients can be transformed into delicious dishes through simple, creative cooking.
The recipe book, which you can find below, brings together the recipes prepared and shared during the dinner, offering inspiration to reduce food waste, support local production, and rethink how we cook at home.
